Companies like Growing Underground and Fischer Farms are scaling up, leveraging LED technology, hydroponics, and AI-controlled environments to achieve yields 100 times higher per square metre than traditional agriculture. The implications are staggering: fresh produce grown within city limits, year-round, with 95% less water and zero pesticides.
